Vegetable pepper stew
Vegetable meals belong to our favorites. They always make us feel better! And this stew (Lecso in hungarian) is a staple in our kitchen. The tomato season (august and september) are the best time for this stew, vegetable is ripe and tastes the best, but since we can't imagine going through the winter without it, we stock up on tomatoes in the summer and either pickle them or freeze them. The same is done with pepper, but not in the same amount, since it's much harder to get good tomatoes in the winter. The recipe is simple and I am not aware of any variations or enhancements. I can only add that my Lecso is more similar to the Hungarian one because chilli pepper plays a major role.

- tomatoes - 1 and a 1/2 kg
- pepper - 700 g
- onion - 4 large
- chilli - 1
- oil - for frying
- garlic - 4 cloves
- salt, caraway

Result: 4 portions
Tomatoes, peppers and onions are the basis. Preparing and cutting these is a little tiresome, but I put on some music and go with it. The only thing I do differently to most people, is that my work is a little reversed. Cut the onions, put in a large pot, fry till brown. Meanwhile, I cut the peppers - I usually buy green and yellow ones, mostly for the color. Put away the seared onions and add peppers instead of them, baste with some water and stew for about 15 minutes. Cut the tomatoes in the meantime. Add them with the strips of chilli pepper to the peppers, add salt and stew until all the tomato juice is gone. Add wiped garlic, put the pan away and stir in the seared onion - I do it this way so I wouldn't lose out on the great taste of the sweet onion. The stew tastes much better this way, and that's more fun.
If you are used to adding an egg, feel free to do so, I can do without. Sometimes I want a little change and add a teaspoon of kari in the beginning along with the onion. I know what you're thinking, what does kari have to do with Hungarian cuisine, but I tried it out and I was pleasantly surprised, it's really delicious. Plus, kari is very beneficial health-wise and it warms you up!
You can serve this stew by itself or with a slice of almond bread or as a side dish to a meat.
P.S. I use a lot of spices because I don't put any sausages or any kind of meat.
