Tomato pesto
The next one is something we all love without exception and it's tomato pesto. It's easy to prepare and its taste is worthy of praise. That's why I believe this is a good recipe not only for the Italian cuisine enthusiast. You can spread it on toasted bread, bread pancake or just by itself with aged cheese or vegetable - this variant is also suitable for those that want to move to raw food diet. I also cannot forget to mention zucchini spaghetti (made using a spiralizer), it's absolutely perfect with those.
Ingredients
- dried tomatoes - 1 glass (Royal, 330 g)
- fresh basil - 1 cup (10 leaves)
- garlic - 1 - 2 cloves
- parmesan - 1/2 cup
- pine nuts - 1/2 cup (about 5 - 8 g)
Instructions
Prep time: 15 minutes
Result: about 3 - 4 portions
I blend the tomatoes with oil, basil, garlic and pine nuts using a stick blender. Add Parmesan and stir. Sometimes I add fresh capillary into the finished pesto (2 or 3 pieces), sliced into very thin pieces.
