Tomato butter
I thought to myself, that I would like to add one more recipe for a spread, before we launch our webpage. I make the tomato butter either from ripe cherry tomatoes, or big ripe home tomatoes from my personal supplier.
Fresh herbs are perfect for this butter. Tastes delicious on bread, bread pancake, or savory pie, you can also have it with cooked fish or grilled meat.
Ingredients
- cherry tomatoes - 500 g
- garlic - 2 cloves
- butter - 200 g
- salt - preference
- herbs - basil, thyme, parsley
Instructions
Prep time: 5 minutes
Cooking time: 30 minutes / grill / hot air
Slice the tomatoes into smaller pieces and put them with salt on a crisp plate with baking paper and bake for about 30 minutes in a combined microwave oven. During the baking I check up on them and after about 15 minutes stir them around, because the peels tend to stick together and burn, add 50 grams of butter and check every 5 minutes until the end of the baking, so 3 times in total.
Take out the tomatoes, put them in a bowl, add butter, garlic, herbs and mix it all up.
Add salt or honey if necessary.
When I am making bigger amounts I put them in glasses while they're still hot with bottoms up until they cool off and then put them in the fridge.
