You often ask us what do we eat through the day and what does our diet plan look like. You only need to check our the website healwithmeal.net or our cookbooks to find out. Of course there are even more recipes than that, I always come up with new things and variants, if only to keep high variety of the diet.

Today we stocked up on ingredients for the pantry and the fridge (which were woefully void of content) and I thought I should give you a tip for a lunch or dinner that is simple enough and something that anyone should be able to enjoy.

So this time it’s salmon, wash it up and put some salt on it and cure it in olive oil and herbs – oregano, basil, garlic, shallot and few drops of lime juice. Don’t skimp on the salt or herbs, the fish will soak up everything!! Put the cured fish in thermal oven and cook until the meat turns pink, that took about 20 – 25 minutes on 180 °C heat.
For a side dish I sauteed some eggplant on olive oil (cut into wider slices, about 1 cm, dehydrated). Add some salt and pressed garlic and finally some home made hot chilli pepper sauce. Radek had 2 mini pecan bread slices as well.
If you happen to have indoor electric grill, definitely prepare the eggplant on the grill, aside from the usual benefits you also need much less oil than the frying pan.

I hope I was able to inspire you at least a little bit and of course any ingredient change is allowed, as long as it is in accordance to the SCD ingredient philosophy :). You can have some other fish instead of salmon, like carp, trout or bream with different herbs and spices. You can grill some zucchini and red bell pepper, which you can see in the photos. Pretty much anything you like to eat. But if I can make one recommendation, it has to be the eggplant, it’s extraordinary.
