Soup Noodles by Marushka
I have a new piece for you, recipe for soup noodles (known here in Czech republic as Celestyn noodles), which was sent to us by Mrs. Marie Kalužová. She wrote the instructions herself and took some beautiful pictures, you can find these in the gallery. She tried experimenting in her kitchen while also having some fun with the camera 😉 Before we jump into the recipe, I will offer you part of our written correspondence.

"Good summer day Marky, I am sending the promised recipe with the pictures. It turns out it's not so simple thinking about cooking and taking pictures at the same time and I basically only whisked some eggs. I pay my respects! SCD soup noodles: whisk 2 eggs until they foam. Drop some olive oil on a Teflon pan and smear. Pour the eggs and sear both sides as if you are making pancake and roll them up just the same. Slice half of them and put them in the broth, rest can be stored for later. You may want to put some salt on the eggs, I myself choose not to do so. They are also amazing if some green parsley is added... Enjoy!"
Isn't SCD fun? 🙂 I tried this SCD variant of soup noodles today to see how they are and also to take some pictures myself. Noodles are excellent, simple and light. I like this version, it's actually an omelette or a pancake if you will, without flour or milk. I am very satisfied. I am sure you will enjoy it as well, and you can add it to the list of ways to prepare eggs in the starting phases of SCD, the path to recovery and healing. 🙂
Ingredients
- eggs - 2
- salt, pepper - for taste
- cold-pressed olive oil - 1 tspn
Instructions
1./ Let the pan with olive oil heat up.
2./ Blend the eggs with salt and pepper with a stick blender. You can also add some herbs as suggested by Marushka.
3./ Pour the mix into the pan, after about 3 minutes turn over and cook the other side, but for a shorter time. Just like an omelette.
4./ Let it sit and cool, roll it up and slice into strips. Thus, bringing to life small cute snails.
