Raw date nut balls
There was this very cunning girl called Alice that put up a recipe for Raw Energy Balls on her Facebook profile. She shouldn't have done that, cause I immediately felt like having some right away. The beautiful little balloons coated in coconut were calling to me. I checked the ingredients, adapted the recipe to fit the SCD rules and I managed to make perfect raw SCD nut balls, that unfortunately don't last very long on a plate, even during the photo shoot they kept disappearing!
Ingredients
- seedless dates - 500 g
- cashew - 2 cups
- pecan nuts - 2 cups
- coconut oil - 1 spoonful
- Cinnamon - 1 tblspn
- ground coconut - for coating
- coconut oil - inside and for shaping
- salt - pinch
Instructions
Prep time: under 30 minutes
Result: about 45 pcs
Soak the dates for about an hour. Pour about 50 ml of the water in a separate glass, and pour the rest of the water away and blend the dates with the separate water in a blender.
Put the substance into a bigger bowl, add cinnamon, coconut oil, ground nuts and mix well. If the dough seems sticky, add more nuts.
Shape the balls using a kitchen measuring spoon (15 gram) and use coconut oil to add finishing touches. Lastly, coat them in shredded coconut. The process is the same as in the video recipe for coconut balls.
And when i want to shake things up a little, I coat the balls in ground pistachio nuts - they must be natural, unsalted, unroasted. Also almond flour works.
P.S.: Instead of 2 cups of pecan nuts you can use 1 cup of almonds and 1 cup of walnuts.
