Pea balls
The recipe for these Pea balls came to be by a circumstance. I decided that to a Carp with herbs I'll make a pea purée, and I wanted to arrange it so that it looks better than most pictures on the internet. So I tried various forms and presses but to no avail. When the purée was dense it couldn't be pressed by cookie cutter, and when I watered it down, nothing could be done with it further. As I was pouting I was playing with the seared and mixed pea in my hands when Radek saw me and said: "Just make balls from it!". The dense blended pea had the perfect form and it was easy to shape it. And that's how they came to be.
Ingredients
- peas - frozen - 350 g
- oil - 4 tblspns
- butter - 10 g
- leek
- garlic - 1 clove
- salt - preference
- pepper - preference
Instructions
Prep time: 2 minutes
Cooking time: 20 - 30 minutes
Result: 8 balls
Put the frozen peas on a pan and let them defrost. After the water vaporizes, add salt, pepper, drop of oil, softly cut circles of leek and cook it all for 5 - 10 minutes. Before finishing, add the butter, let it melt and then remove the pan from the flame. After a while (roughly 3 minutes), put the prepared peas into blending jar, where I mix it with the garlic clove with a stick blender. Shape the resulting paste with palms into spherical dumplings with a 3 cm diameter and serve right away!
