One of the hot topics is, what's for breakfast? We have an non-usual egg pancake here that you can make within 10 minutes with ease.
And it doesn't necessarily have to be for breakfast only, it will serve as lunch or dinner as well. During the last 2 months of recording of our video guide I made this pancake a lot, since there wasn't much time left for cooking.
- Eggs - 2 or 3
- pepper, salt
- fresh herbs - preference - basil, marjoram, parsely
- tomato chutney/hot sauce - 2 tblspns
- hard aged cheese - 30 - 50 g
- garlic - small piece
- olive oil for cooking - t tspn
- rocket salad, lettuce
Crack an egg into tall blending cup, add salt and pepper.
You can also add the garlic, it's not necessary but me and Radek like so we put just a tiny little piece of it in there. If you are planning on going somewhere important in the morning, then you can probably skip it 😀 then add the cut herbs, as much or little as you like.
My favorite is basil, very aromatic and I just cannot get enough of the smell. It rests on my window in the living room and in the garden, all spring and summer. It's the basil that makes the omelette so "non-usual" 😉 It also helps digestion, calms the nerves and boosts the mood, very good for making tea as well.
But back to the recipe, blend everything with a stick blender into a foam.
You don't even need a stick blender, you should be able to work it alright with a whisk. 😉
Put a tablespoon of oil on a moderately heated pan and pour in the egg mix.
Cook first side for about 4 minutes, the other side needs less than a minute.
Finished pancake is put on a place, spread some tomato chutney or hot sauce of your own making, scatter some grated cheese and roll it.
Be advised, it's a quite large pancake, it is very filling 😉
