When we found out that potatoes are according to SCD diet inappropriate, or rather restricted (literally illegal) we were quite surprised. Most of all me, since I don't like pasta but absolutely love potatoes of all kinds. When we made the first pumpkin soup it was love at first taste. Then came pumpkin purée, mashed, then cooked with herbs, then fruits and pumpkin pancakes. Today I have mashed pumpkin for you, since that is one of the more successful meals among our family and even among those who are not on SCD and don't even want to hear about any special diets in the first place. This only proves that you just need to know how to get them.
- Pumpkin - about 1,5 - 2 kg (hokaido or butter)
- broth - beef, chicken, vegetable or water
- butter - around 20 g
- oil - 2 - 3 tblspn
- garlic - 3 - 5 strips
- onion - 3 pcs
- basil - 15 leaves
- salt - preference

I go to the basement for the pumpkin and im getting my biceps ready because this orange beauty is quite the work at first. But don't worry it's just a little tougher so I recommend a big ol' knife. Wash the pumpkin cut to quarters, put on gloves (it leaves soft orange crust on your hands that is hard to wash off), gouge the seeds and threads oout with a spoon (that is easy) and cut to smaller cubes (Hokaido pumpkin does not peel off, we boil it with the peel on, which goes nicely soft after boiling, but if you have butter pumpkin the peel must come off). Then I put the cubes into a bigger pot and pour the broth or water in, or eve both (forget about bouillons in cubes!!). Pumpkin should be soft but not completely boiled over, it should be boiled for about 20 -30 minutes with a gentle flame. Then leave the pumpkin cool off, dump any leftover water, add salt, pressed garlic, butter, freshly cut basil and mash. Or shake in a pot with the appropriate lid on.
During the boiling process I fry the onion with sunflower oil and in the last moment add a spoon of honey, add salt and then stir it into the pumpkin or use for decoration.
