This honey nut treat was the first recipe from Elaine's book that I tried. The recipe seemed simple enough, it had only 4 ingredients and we just love sweet stuff. We fell in love at first taste and it also made us realize that we can do this. SCD will not take away from us amazingly tasting food. And it will open up the door to a brand new world of tastes and healing. Almonds, butter, honey, vanilla, this combination is just heavenly.
This recipe may also be used to make a pie crust. Line pie plate with parchment paper to prevent sticking.

Cuts into: 20 servings
Process nuts in a blender for only a few seconds until nuts are coarsely chopped. Do not over chop or you will get a flour-like texture which is not suitable for this recipe.
Before I get into cooking, I prepare the vanilla, that means I get it out of its shell. Cut the bean horizontally and using the blunt side of the knife, I take out the seeds. Easy-peasy.
Now take the melted butter, honey and vanilla and put it into a bowl, whisk for about 15 seconds. Add the chopped up almonds and mix using a palette-knife.
The resulting mixture is poured into a crisp plate that is covered with baking paper. Heat up the oven and bake. The mixture should turn golden brown because of the caramelization. After I take it out of the oven, I let the bubbling mixture cool off a little. Then I slice it up while it's still warm!
