This honey nut treat was the first recipe from Elaine's book that I tried. The recipe seemed simple enough and it had only 4 ingredients and we just love sweet food. We loved it at first taste and it also made us realize that we can do it. We can cook SCD. And that SCD will not rid us of well tasting food. Almonds, butter, honey, vanilla, this combination is just heavenly.
This recipe may also be used to make a pie crust. Line pie plate with parchment paper to prevent sticking.
Cook: 12 mins / 375°F or 175°C / 650 W
Cuts into: 20 slices
Process nuts in a blender for only a few seconds until nuts are coarsely chopped. Do not over chop or you will get a flour - like texture which is not suitable for this recipe.
Place chopped almonds in a bowl and set aside. Put butter, honey, and vanilla in blender, pushing ingredients down to bottom of container before turning blender on.
Process for about 15 seconds until ingredients are whipped. Transfer mixture to bowl containing chopped nuts and blend thoroughly with a spatula.
Spread in a shallow cake pan and bake until golden brown.
Cut into squares while still warm.
