Grilled peaches with caramel
Of course fruit is the best when freshly picked or bought from a farmer's market. But! When it's the season of grilling, what if we, the flower and herb enthusiasts, grilled something as well? And not just pepper or zucchini, but something sweet for a change!
I saw a grilled pineapple the other day, but I wanted fruit that grows here and is seasonal. First thing I thought of were peaches. I don't know why, but they seem like the best option for the grill.
I used electric table grill and I prepared a new SCD recipe. Just wait till you get a first taste!
Ingredients
Instructions
Prep time: 10 minutes
Grill time: about 10 mines
Result: 4 portions
1. First I prepare the curd filling. Blend it in a prepared glass with 1 spoon of honey and a vanilla husk - no vanilla extracts! If the curd is too hard and is being difficult to blend, add a bit of water - add it carefully, you don't want it to become too runny (I don't use the honey for this purpose, it would be too sweet, I use caramel for the sweet taste). The resulting filling is put away for later into the freezer.
2. Now is the time for SCD caramel. It;s very simple. Using a teflon frying pan (5th degree of electric stove, not the max heat!) melt about 40 grams of butter, takes about a minute and then add 3 to 4 spoons of honey. Let it caramelize for a bit and then put away.
3. Heat the table grill to the 3rd of the five degrees. Halve the peaches, remove the seeds and melt a bit of butter on the grill. Put the peaches on the grill with the exposed side down. And then I just check up on the peaches how are they coming along.
4. When all is done, prepare the plates, flip the peaches with grilled side up, add the curd filling, pour over the caramel and finally scatter some crushed nuts on top.
Let these peaches create some unforgettable moments for you! They are well worth it.
