Coconut Pie
This coconut wonder is a gift from heavens, especially if you enjoy this white thing - the coconut, as much as we do. 😀
It's everything SCD stands for, and it's also great for people who don't love nuts. 😉
The recipe was sent to me by my mother Eliška and then I also found it on a food blog 'Šárčina škola vaření' (Šárka's school of cooking).
It's simple and swift. Let's get to it right away.
What ingredients do we need?
Ingredients
- shredded coconut - 250 g
- orange juice - 250 ml
- honey - 4 large tblspns
- coconut oil - 4 tblspns (liquid)
- eggs - 6
Instructions
1./ Pour the orange juice on the coconut in a bowl, of course the juice is home made and pressed, let it sit for 30 minutes. Coconut will soak the juice and get soft.
2./ Split the eggs. The egg whites go into a tall glass for the cream, the yolk goes into the bowl with coconut. Add honey, oil and mix.
3./ Whisk the cream up from the egg whites and carefully add it to the mix. The mix is poured into a pie form (tin, glass, silicone - whichever you prefer, of course depending on the material, you want to smear some oil or sprinkle some ground nuts or nut flour in there). Bake in a preheated thermal oven.
Šárka bakes at the heat of 170°C for 45 minutes.
Baking time: 25 min/600W/140°C
